Cheesecake is one of those special treats we order when we go out to eat at a nice restaurant. But, it doesn’t have to be something you can only have once in a blue moon. It is easier to make than you might think. My recipe is not only easy and quick but it is delicious!
Here’s what you need:
Mix in a mixer, at medium speed, until well-blended:
– 2 8 oz. packages of cream cheese (softened) – see note below
– 1/2 cup sugar
– 1/2 tsp. vanilla extract
Add 2 eggs to the mixture and mix well. Pour batter into ready-to-use 6 oz. graham cracker pie crust. Bake at 350 degrees for 40 minutes or until the center is almost set. Cool completely. For best results, refrigerate for 3 hours. Makes about 8 servings.
“Note”: To soften the cream cheese, scoop the cream cheese into a microwave-safe bowl or dish. Set the microwave to “High” and heat for about 15-20 seconds of cooking time. If the cream cheese isn’t soft enough, continue to heat it in ten second increments. Check its texture after each heating session. If the cream cheese is too soft, let it sit in a cool bowl on the counter for five minutes (or in the fridge for two minutes) before using it in the recipe.
I used this recipe to make cheesecake for a good friend’s birthday when I learned that he loved cheesecake. Everyone was amazed at how delicious it was, but I didn’t explain that it was so simple to make. I let everyone believe I was a dessert-making genius.
I never knew cheesecake, or anything so scrumptious, could be so easy to make. We sometimes buy toppings like chocolate, strawberry sauce, or caramel to add to the cheesecake but it is amazing served plain too.
